1/4 cup olive oil

3 tbsp butter or butter alternative

5 large carrots peeled and cut into sticks 

1/2 teaspoon of coriander

Salt to taste


In a large saute' pan, heat butter and oil on medium high heat for 2 minutes.  Add carrots and coat them with the oil and butter mixture.  Add coriander and stir again.  Let saute' for about 10 minutes, stirring occasionally.  They are done when they are slightly soft but still firm.  You don't want them too mushy. 

Sprinkle with salt and enjoy.
