Perfect vegan pasta


1 package Andean Dream pasta (this is the best tasting and healthiest GF pasta

1 pint cherry tomatoes

a few handfuls of arugula 

1/4 cup olive oil

1/2 cup ricotta (I love vegan Kitehill)

salt and pepper


Preheat oven to 400 degrees. meanwhile boil 2 quarts of water in a saucepan.

In a glass baking dish...lay the tomatoes in the bottom of the pan.  pour olive oil over and stir to coat.  Sprinkle with salt and toss again.

Roast in the oven for 15-20 minutes. Tomatoes are done when a few of them begin to pop. Using a spatula, flatten them out to release the juices.
While the tomatoes are roasting, cook pasta according to package instructions and drain - reserving 1/8 cup of pasta water.

Pour the pasta and water over the arugula.  Add tomatoes, ricotta and salt and pepper and toss.
