3 large sweet potatoes peeled and sliced into circles
1/2 stick grass fed butter
Preheat oven to 450 degrees. Melt butter over low heat. set aside. spread potatoes onto a parchment paper covered baking sheet. Pour butter over potatoes. Flip potatoes over making sure both sides are completely covered with the butter. Sprinkle sea salt generously only both sides of the potato discs. Roast for 20 minutes. Flip potatoes over and roast another 20 minutes.
Remove from oven and enjoy hot or cold. These discs are excellent base for a salty sweet snack or appetizer. Topping examples, goat cheese and honey, ricotta and olive oil, manchego and bacon, cottage cheese and raspberry preserves.
I also like to throw these on an arugula salad with goat cheese and salmon.
