1 1/2 cups oat flour (I prefer Better Body Foods)
3/4 cup coconut sugar
1/2 cup Mykonos vegan butter - room temp (you can certainly use regular unsalted butter)
1/3 cup applesauce - room temp
1/2 tsp cinnamon
1/2 tsp sea salt - more to sprinkle on top
1 tbsp vanilla
1 tsp baking soda
1 bag vegan dark chocolate chips (Enjoy Life brand is the best)
Preheat oven to 350 degrees.
In a large bowl sift together flour, salt, baking soda and cinnamon. Set aside.
In a a standup mixer - beat butter on high speed for 5 min, scraping sides down occasionally. Add applesauce, vanilla and sugar and beat on high speed for 3 minutes.
With a rubber spatula, manually fold in flour mixture until just combined. Please don’t over mix.
Fold in chocolate chips.
Scoop dough onto baking sheet using a a soup spoon. Using a small bowl of water, wet your fingertips and press each cookie down and sprinkle with sea salt.
Bake at 350 for 10-12 minutes. Cookies will be slightly brown around the edges. Leave on the baking sheet for 5 minutes. Transfer to cooking rack.
