Waffles gluten free vegan waffles with blueberries and chia seeds 3 ingredients pamela's baking mix


2 cups of Pamela's Baking mix

4 tbsp of chia seeds (soaked in 3/4 cup of water for at least 30 minutes or overnight)

1.5 cups of almond milk

1 tbsp apple cider vinegar

1 tsp cinnamon 

cooking spray


Heat waffle iron for at least 10 min on high.

Combine chia/water combo, apple cider vinegar, cinnamon and almond milk in a blender for 1 minute on high.

let the mixture sit for 5 minutes. 

Pour wet mixture into a mixing bowl. Whisk in the baking mix until combined and pretty smooth.

Spray top and bottom of waffle iron with cooking spray. 

Scoop mix onto iron and cook 4-5 minutes. Waffle irons vary so just keep on eye on it. 

I top my waffle with nut butter or fruit.  My son likes his with butter and syrup and my daughter prefers chocolate chips. 

I like to double the batch, store  in the refrigerator or freezer and toast them as needed.
