2 - 28oz cans organic whole tomatoes

1/2 cup olive oil

1 large shallot - diced

3 garlic cloves - minced

1/2 tsp sea salt

2 tsp Italian seasoning - I love Simply Organic brand

Using a wire whisk, saute' shallots, garlic and seasoning in olive oil over med high heat.  Stir continuously once the oil begins to simmer.  Do this for approximately 1 minute.  Add the tomatoes and stir again with the wire whisk - squashing the tomatoes down to release all juices.  Turn the heat up to high and bring to a boil. Reduce heat to low, cover and simmer for 4 hours.  

DO NOT SKIP THIS STEP! Remove from heat and let cool for 20-30 minutes.  Puree in a high power blender for 30 seconds. This step makes all the difference.  Your sauce will be velvety smooth and melt in your mouth.

Use on pasta, pizza, or bread dipping.
