1.5 cups pitted Medjool dates
1/2 cup unsweetened almond milk
1/2 cup of creamy (smooth) almond butter
1 tsp vanilla
1/2 cup cacao powder
1/2 tsp baking soda
1/4 tsp sea salt
1 cup dark chocolate chips ( I love vegan Enjoy Life brand)
Preheat oven to 350 degrees.
Blend (yes in a blender) dates, almond butter, almond milk and vanilla until smooth.
Transfer to a mixing bowl. Add cacao powder, baking soda and salt. Stir until just combined. Fold in chocolate chips.
Grease a springform pan with coconut oil. Transfer mixture to the pan and spread evenly. Bake for approximately 25 minutes (check after 20 minutes to make sure it's not yet done. The perimeter will be firm when done.
Let cool for 15 minutes then scrape a butter knife along the perimeter and release the springform. Serve warm or room temp.
