VANILLA CHOCOLATE CHIP MUFFINS

Dry ingredients:

2 c gluten free oat flour

1/2 c gluten free baking flour

2 tsp baking powder

1 tsp baking soda

1/2 coconut sugar

1/4 tsp nutmeg

1/4 tsp salt

Wet ingredients:

1 cup almond milk with 1 tsp apple cider vinegar (mix together and set aside for 5 minutes)

1/4 thick full fat coconut yogurt

1/2 cup unsweetened applesauce

2 tbsp vanilla

1/4 cup of vegan butter melted - Mykonos is best

Dark chocolate chips 

Instruction:

Preheat oven to Sift all dry ingredients together in large bowl and set as side.

 

Whisk the wet ingredients together then fold into dry ingredients.
