2lb fresh salmon - cut into small filets.

Lots of avocado oil

Zest of 1 lemon


sea salt


pickled red onions

Corn tortillas


Pat salmon dry. Brush both side of fillets with avocado oil, sea salt, paprika and lemon zest. 

Generously coat the bottom of a cast iron skillet with avocado oil and heat to medium high - let it heat up for about 5 minutes.

Cook salmon filets 5 minutes per side.  Salmon will pull apart easily and be pale pink inside.

heat corn tortillas on med/high heat in skillet with avocado oil - just need a tiny bit.  1 or so minutes per side.  

Stack salmon, onions and avocado onto tortillas.  Enjoy! 

extras - you can add sliced cherry tomatoes
