Ingredients:
1 cup creamy peanut butter - (Choose a product that contains peanuts and salt only)
1/2 cup of quinoa flour
1/2 cup of maple syrup
3 tbsp vanilla
1 tsp of cinnamon
If your peanut butter has no salt add 1/4 to 1/2 tsp of salt.
Directions:
Preheat oven to 350 degrees. combine peanut butter, maple and vanilla in a medium size bowl. Consistency should be very creamy. slowly add the quinoa flour. Stir until just combined.
Take tbsp size portions of the dough and roll them into balls. place them on a baking sheet. You should be able to get 12-15 on a sheet depending on size. Delicately flatten each cookie with a fork. Cookies should not touch each other on the baking sheet.
Bake cookies for 12-15 minutes. Check them at 12 minutes. They should be just slightly brown.
Let cool on baking sheet for 5 minutes then transfer to aluminum foil placed on a flat surface.
Additons...
You could add chocolate chips on top or one big chocolate chunk in the center of the cookie. Do this right as the cookies come out of the oven. Press them down lightly into the cookie.
