chop all these veggies into small chunks
1 zucchini
1 yellow squash
2 broccoli stalks
3 carrots
1 red pepper
1 yellow pepper
1 cup cooked quinoa
1 can chickpeas rinsed and dried
1 cup roasted pumpkin seeds
1/4 cup shallot dijon vinaigrette
Toss everything together in a large bowl. Enjoy!
