Ingredients:
1 1/2 lbs boneless skinless chicken breast
3 cups of chicken bone broth
1 15 oz can of diced tomatoes
1 12 oz package of frozen corn
1 small can diced chilis
1 small can diced jalepeno
2 packages of taco seasoning mix - I love simply organic because it's just spices.
Toppings:
Chopped cilantro, sliced avocado and tortilla chips
Adaptogen herb compound
Instructions:
Combine all ingredients except chicken in a crock pot. Stir until seasoning has dissolved. Place chicken breasts into the mixture at the bottom of crockpot.
cover and cook on high for 4 hours. Remove just the chicken from the crockpot and place on a plate. It will pull apart easily. Shred the chicken and add back into the crockpot. stir the chicken into the soup.
Spoon into bowls and top with any combo of cilantro, avocado and chips.
