ROASTED FENNEL & RED POTATOES

Ingredients:

1 lb red potatoes, rinsed, dried and quartered

1 large fennel bulb cut lengthwise

1/4 cup olive oil

1/2 tsp coriander

salt and pepper

Instructions:

Preheat oven to 450 degrees.

Combine all ingredients in a large bowl.  Make sure all vegetables are well coated with oil and seasoning.

Spread mixture evenly onto a baking sheet.

Roast for 30 minutes, stirring halfway through.

Enjoy!
