EGGS AND GREENS (GREEN EGGS)

Ingredients:

2 large organic eggs

1 handful of arugula 

A few shakes Calm The F Down - Adaptogenic Herb Compound

A few shakes red pepper flakes

A few jigs of olive oil

2 pieces of bread toasted firm and crispy ( I used Base Culture Sourdough)

Process:

In a large skillet, heat the oil on medium high for about 2 minutes.

Add eggs, adaptogen, red pepper flakes and stir.  Shuffle the eggs around as they cook, flipping them over until almost cooked.  Throw arugula in the pan and fold into the eggs. Arugula will shrink and become wilted. Eggs will be done when they are firm and no liquid remains.

Place egg mixture on top of toast.  Sprinkle with sea salt if desired.
