Buttery (with no butter) Baked Sea Bass


2 one inch thick sea bass filets

1/4 cup white wine vinegar divided

1 shallot - minced

1/4 cup olive oil 

1 teaspoon of Italian seasoning

sea salt and pepper

4 Lemon slices


Preheat oven to 450 degrees

place filets in ceramic or glass baking dish.  Let sit for 10-15 minutes to get to room temp.  Your fish will cook much more evenly if you allow it to warm up a bit.

Poor half of the vinegar over each filet.  

In a small bowl, combine shallots, olive oil and italian seasoning.  Pour over each filet, spreading evenly over the top.  The filet should be coated generously with the mixture.  Salt and pepper each filet. Place lemon slices in the bottom of the pan. 

Cook for 20ish minutes.  The filet should be white and flake apart easily.  Check it after about 15 minutes as oven cook times may vary.
